This wine is certainly the flagship of the winery, it spends eight months in barrels and twenty months in bottle aging before release. The result is a wine with an attractive dark red colour with cherry reflections throughout. There are huge aromas of ripe black fruits with mineral and balsamic overtones. On the palate it has a great fruit taste, a seductive wine with a very long finish.
The Bernal García-Chicote family (father Santiago and his two sons Ángel Luis and Moíses) run this 19 hectare estate located in the province of Ciudad Real.
The family’s old olive oil mill was converted into a winery in 2001 to provide modern winemaking facilities which include both temperature and humidity control.
Extended maceration is the secret behind Ovidio’s concentration and intensity. The skins are left in contact with the wine for over 30 days! The temperature is carefully controlled and the wine monitored during this long maceration period to ensure that the tannins do not become too astringent.
Their wines are neither fined nor stabilized during the vinification process. They undergo a light filtration prior to bottling, so a heavy sediment is to be expected.
